Quality assurance involves sampling biscuits on the conveyor belt prior to packaging every ten minutes. The biscuits are tested for moisture, colour and weight, to ensure the product is of best quality. Hygiene is a main concern when packaging items. Prior to packaging the biscuits must be checked my inspecting staff on its appearance. Once packaged the biscuits are checked for contamination and weight. Biscuit flours, water absorption levels, dough development times are constantly checked as a quality control factor.

Employees must determine procedures to reduce occurring hazards at every stage of the production of biscuits. They need to detect the control of each Critical Control point and frequantly monitor records and storage. They must control a hazard that has occurred and be able to prevent reoccurrence. Every hazard is documented and recored to develop ways to prevent reoccurence. Safety signage is provided to inform hazards to employees and all signage must be followed. Emergency exits must not be blocked and any spills must be cleaned up.
EMPLOYEES PERSONAL HYGIENE AND PROTECTIVE WEAR
Employees must comply to the dresscode. They must wear long pants with no pockets and have fully closed in shoes. They must not wear any metal or lose clothing. There must'nt be any use of cigarettes, drugs or Alcohol.
